Carrot and Eggs

There are days you just don't have a lot of time and you want something simple.  Carrots and eggs is one of simple dish I make.  It is so easy, and my children like it!
I don't know why they like this dish.  I think it could be the secret ingredient.
Chinese sausage is another favorite. It reminds me of my own childhood.  My mom used to go to the market to have sausage custom made and she would hang the sausage on the bamboo stick on the back porch for it to dry.   Chinese sausage in lunch box is one of the old childhood memory.

Mother's Day Dinner

Since it is on Sunday, I usually like to put meals in the crock pot to cook while we are in Church. This is one of the regular crock pot dinner.  All you need are some pork, a jar of homemade salsa and a cup of brown sugar.  Just put everything in the crock pot and let it cook for 5-6 hours on high or low. It is always nice to come home from church and smell the cooked dinner. :)

Today, we also got to skype with Elder Croft(Jared).  It is always a special time to talk to your missionary. He is doing well. And he has grown spiritually. I am still amazed at all my children's spiritual growth.  I know they are all beyond me.

It is always nice to have the children home. Having only one child at home. Dinner time is usually quiet. But having the others home make it more interesting.  Now I understand how my mom feels.  Now she is usually alone at home.  She always tells me how she misses having all of her children home at dinner time.
